I remember eating these scrumptious potatoes up the canyon one year on Cortney's birthday. Yum!!
Dutch Oven Potatoes
1 lb. bacon
3 large onions, sliced
5 lbs. potatoes, sliced (peeled or unpeeled)
2 cups grated cheese (cheddar or your favorite)
Fry the bacon and remove.
Cook the potatoes and onions.
Add salt and pepper as needed.
Stir occasionally.
Add bacon when potatoes are nearly done.
Add cheese on top and allow to melt.
Serve hot in a cool canyon!
